Clean Choc. Cupcakes

Do you like warm, moist, gooey, melt in your mouth chocolate cake? We do to. And now you can enjoy it guilt free.

What do you do on a movie & treat night and you don't have the treat? You make one! We paused the movie about halfway through, and with the help of my two little girls, we set to work creating something chocolaty & delicious. 

CLEAN CHOCOLATE CUPCAKES

5 ripe bananas
6 eggs
1 tablespoon of vanilla
5 tablespoons of maple syrup
1/3 cup coconut oil (melted & cooled)
3/4 cup natural peanut butter
1/2 cup coconut flour
2/3 cup cocoa powder
1 tsp aluminum free baking powder
1 tsp baking soda
1 tsp cinnamon 

Method: mash up your Bananas. Then toss in peanut butter, vanilla, eggs, maple syrup, and coconut oil. Mix well (I use an electric mixer for this). In a separate larger bowl mix Cocoa powder, coconut flour, baking powder, and baking soda. Mix well. Then create a well in the centre of the dry ingredients. Fold the wet ingredients in a bit at a time and mix all together well. 

I line my muffin tins with paper liners. Then I use a 1/4 cup to measure The batter into each muffin cup. Bake at 325° we're about 25 minutes or until you put a toothpick in the middle of a cupcake and it comes out dry. Let cupcakes cool, then spread cupcakes with icing before serving. 
Then Serve and devour 

CLEAN CHOCOLATE ICING 

2/3 cup natural peanut butter
2/3 cup Chocolate Shakeology (or cocoa powder) 
2/3 cup maple syrup
1 tsp vanilla
1/2 cup + 1 tbls full fat canned coconut milk

Mix all together well - I use an electric mixer with the whisk attachments.

Makes 18 large cupcakes

*** This would also be awesome with Hazelnut butter instead of peanut butter, and then toss a tbls of 2 of instant coffee in the batter, so you'd have a coffee and hazelnut cupcake..more adult style, but hot damn that'd be tasty!
