Chorizo & Chickpea Soup
I LOVE a warm bowl of fragrant soup on a cold fall day! This soup is one of our faves because it is so hearty and bursting with flavor. When I make this and our kids are eating it, I omit the cayenne while cooking, but then I add it into Jeff and I’s bowls individually after I have served the kids. It’s NOT the same without the little bit of spice (unless your 4 years old, then no spice is good spice! lol). My version here is just slightly adapted from the original recipe that my mom found by Maggie Pond on Food and Wine.
I really enjoy finding recipes that don't need a lot of modifying to be clean. This is one of those gems!
Ingredients:
- 4 medium sized chorizo sausages ( I prefer grass fed organic)
- Two 19 ounce cans of chickpeas drained
- 1/2 cup water
- ¼ cup extra virgin olive oil
- three medium carrots, halved lengthwise and thinly sliced
- 1 medium onion finely chopped
- 1 garlic clove
- 3 tablespoons tomato paste
- 1 1/2 teaspoons of smoked sweet paprika
-1/4 teaspoon cayenne pepper
- 4 cups beef stock or low sodium broth
- 1 teaspoon of organic sucanat or coconut sugar
- Ezekiel bread for serving
Method:
In a small pan, cook the chorizo over moderately high heat until lightly browned and most the fat has been rendered, roughly 3 to 4 minutes. Then drain the chorizo on paper towels. Next, in a food processor, purée half of the chickpeas with the water until smooth.
In a big soup pot heat the olive oil , then add the carrots onion and garlic cover and cook over moderate heat until soft roughly 5 minutes. Next, Add the chorizo, smoked paprika, tomato paste, cayenne, and cook, stirring for about a minute. Add the beef stock and sucanat with the puréed and whole chickpeas and bring to a boil. Simmer over moderate heat until the veggies are tender, roughly 10 minutes.
Serve the soup in deep bowls with the Ezekiel bread on the side.
Portion Fix portions : A 1 Cup soup serving is 1 yellow,1 red, ½ tsp,and about ¼ of a green . And don’t forget to add a yellow for each slice of ezekiel bread!
