Apple Sauce Pancakes
I love pancakes. Like I mean I REALLY love pancakes. I spent so much of my life on a ridiculous diet, starving myself, or eating cardboard food. Once I finally learned that I could eat real food, but tasted amazing, and was still healthy.... well... why would it ever eat anything but pancakes?! Lol
But seriously, my family has been putting up with me making banana pancakes almost daily for like three years. So one day when we were out of bananas I was forced to put applesauce in instead, and I was pleasantly surprised! So, these have become our new staple.
I think I finally perfected the applesauce pancakes and I am finally going to share the recipe with you !
APPLE SAUCE PANCAKES
- 2 cups of Oat flour ( we grind organic steel cut oats up into flour in our nutribullet)
- 2 tsp of baking powder
- pinch of sea salt
- 2tbls of cinnamon
- 4 g stevia ( I use 4 Krisida packets)
- 1/4 tsp nutmeg (optional, I think this is an acquired taste)
- 2 cups of applesauce
- 3 cups of egg whites
- 4 tsp of vanilla
- 1 tsp coconut oil (for cooking)
DIRECTIONS:
Mix all the dry ingredients together in a large bowl and set aside .
Then mix all wet ingredients together in a small bowl .
Slowly pour wet ingredients into dry and mix in with a handmixer, scraping the side with a spatula until all is mixed in well .
I preheat a skillet, with a quarter teaspoon of coconut oil for each batch, Then I make cakes with my 1/8 of a cup scoop . Makes a ridiculous amount of pancakes !
VERY filing & fluffy! Just make sure you cook over medium to low heat. Because of the applesauce and egg whites they are very moist, so you want to cook them slower and lower ! Turn out beautiful every time !
*Portion Fix servings : You can eat 1/4 of a batch for 1.5 yellows, 1 red, 1/2 a purple, & 1/4 tsp.
You could top them with a little bit more applesauce to make it a full purple serving and avoid the sugar and syrup !
