Indonesian Beef Satay


Years ago when I first started cooking ( like we are talking a long long time ago. Like back when dinosaurs roamed... haha), One of the first cookbooks I ever bought was called "best of bridge". They had a series of cookbooks and a lot of them were very homestyle cooking casseroles and such. Not really my jam anymore. But Out of those cookbooks came one of my favourite recipes. It was for a Pork Satay. 
For the most part it's not horribly unhealthy. But I have changed it up a little bit (you know if I actually find a recipe to follow I don't really follow it lol), and added a few of my own things. This is how it came out and I still freaking love it! 

The other that is great about this recipe that it is very cost-effective! We buy packages of stew beef from Costco and then the marinade really helps to break down the tough fibres in the meat! You can enjoy a tender beef kebab without the cost of paying for prime cuts of meat!
That being said, I recommend you marinade it overnight if you can or at least for 6-8 hours.


INGREDIENTS
3.5-4 lbs Stew Beef
6 Tbls Grass fed butter butter or organic ghee (I’ve also used coconut oil in a pinch)
3 Tbls lemon juice
Grated rind of 3 lemons
1.5 tsp tabasco
7 Tbls grated onion
3 Tbls organic coconut sugar
3 tsp coriander
1.5 tsp ground cumin
1 Tbls fresh grated ginger (I keep mine in the freezer for easy grating!)
3 cloves of crushed garlic
3/4 cup Tamari (organic soy sauce)
4 Tbls of orange mango juice (I use the Kiju organic brand)t

Melt the butter in a sauce pan and Lost in all the other ingredients. Bring to a boil and then simmer for about five minutes. Pour it over the meat in a glass bowl and stir to coat at all. Once meat has cooled toss in a lathe Ziploc bag and leave in the fridge. You can turn it periodically but it should marinade well if it is sealed in the plastic bag with all the air removed. The butter will congeal but don't let that worry you, its normal! 

When you cook these suckers, throw them on a skewer and grill em' on your BBQ! Turn them frequently for about 10-15 minutes, but don't over cook these babies!
