Spiced Cauliflour Bites

With the holidays upon us, I get a TON of messages from people asking me for healthy holiday food options. 

I LOVE to cook, and I LOVE to healthify stuff! So this works great for my hubby during the holiday's. He is a finger food addict, so I try hard to create lots of healthy appy options for all the holiday partying! 

These fast became one of our faves! And the great thing about these bad boys is that you can premake em', toss em' in a ziplock bag the night before, and then the next day, bring them with you to your social gathering, dump them on a tray and bake em' up, hot and fresh! They come out of the oven smelling AMAZING, and looking much better than those fried frozen food in a box options most of us have clung to in the past! 

Recipe:
-One large head of Cauliflower
-3 tablespoons of melted coconut oil
- 1 teaspoon ground Himalayan sea salt
- 1.5 teaspoon organic sucanat
- 1 teaspoon smoked paprika
- 1 teaspoon regular/sweet paprika
- 1/2 teaspoon cinnamon

Method:
Preheat oven to 500° 
Wash and trim the cauliflower into bite-sized Florets, then dry them with a paper towel. Pour melted coconut oil on top of cauliflower and toss in a bowl to coat. Mix all spices (salt, sucanat, smoked paprika, regular paprika, cinnamon) together in a pinch bowl ( I confess to doubling the amount of spice mix sometimes - I'm a "more is more" kinda person ;)  ). Once the cauliflower is fully coated with oil then you just add your spices and toss again to fully coat. Place cauliflower in a single layer on parchment paper lined baking sheet. Roast for 20 minutes stirring occasionally until all the florets are caramelized. You can serve this as an appetizer with toothpicks or you can serve it as a side dish during a main meal.
