Steel Cut Oat Waffles

This is my first ever blog post. BOOOOOOOOOM!!!! These are my kick ass steel cut oat waffles. Don't take any shortcuts, like not letting the mixture rest for 10 minutes like my wife did. It doesn't work. Just ask her. I hope you enjoy them. They are my kids AND my wife's favorite now.

This recipe yields 2 to 3 round, 8 inch waffles from your typical home style waffle iron.

INGREDIENTS:

  • 1-1/2 cups of steel oat flour (steel cut oats pulverized by our Nutri-Bullet)

  • 2 teaspoons of baking powder

  • pinch of salt

  • pinch of cinnamon

  • 3/4 cup of room temperature unsweetened almond milk

  • 1 tablespoon of melted coconut oil

  • 2 large eggs

  • 1 tablespoon of vanilla extract

  • 2 tablespoons of maple syrup (The 100% Canadian real stuff) *optional (makes this a treat!)

  • Or 2 packets of stevia (Krisida is my fave brand) to keep in on your daily plan instead of the syrup

Mix the dry ingredients together in a bowl. Mix the wet ingredients together in another bowl. Mix together and let sit for 10 mins while iron heats.

*Beachbody Portion Fix -

1 batch :3 yellow's, 1 red, 1/2 replacement yellow for the unsweetened almond milk. 4 tsp coconut oil. So if you yeild 3 waffles, 1 waffle would be, 1 yellow,2/3 of a red and 1.25 tsp.
