Quinio Salad

This has been one of my favorite recipes since I first discovered quinoa! I love the freshness of it! I also love how fast and easy this is to whip up! 

INGREDIENTS

-6 Cups of cooked Quinoa ( I use the true roots organic brand)

- 2.5 cups of cherry tomatoes sliced in discs

-1/2 cup fresh chopped mint

-1/2 cup fresh chopped cilantro

-1/2 cup fresh chopped parsley

-the juice of 3 limes freshly squeezed

-3 tbls of organic olive oil

- 200grams crumbled feta cheese

-sprinkle of himilayan sea salt to taste (optional)

METHOD:

Prepare quinoa according to instructions on the bag. Once quinoa is cooked, remove from hot pot and set aside to cool to room temp. Then while quinoa is cooling wash and chop fresh herbs, squeeze the juice from the limes, and wash and slice the tomatoes. Once the quinoa is cooled, toss all herbs, tomatoes, lime juice, olive oil, and crumbled feta into a bowl and mix well. Serve immediately

*Fix portions - 3/4 cup serving would be 1 yellow, 1/2 blue, and 1/2 a green and 1 tsp,
