Treens Badass Pork

Jeff was pushing me to check out some new recipes on the Beachbody blog, so I entertained him! lol He found this "Core De Force BBQ sauce" and we decided to try it with some pork loin one night. It was just OK. (sorry beachbody!). I am picky though. I LOVE healthy food, but I want it to taste GOOD!  So I decided that I would try the recipe again, but add my own spin on it! I added some ingredients to the BBQ sauce and I decided to create a rub to put on the pork first! So this pork was born! And we love it! Just remember to portion out your BBQ sauce! Healthy or not, portion size does matter! ;)

 

Treens Badass Pork

Rub

- 2 tsp garlic powder
- 1 tsp mild paprika
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1 tsp sea salt

BBQ sauce

- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp Keenes Dry Mustard Powder
- 3/4 tsp sea salt
- 2 Tbls apple cider vinegar
- 3 Tbls maple syrup
- 1/4 tsp liquid smoke
- 1/2 cup tomato paste, no sugar added
- 1/4 cup Worcestershire sauce

2 Pork loins -2.5 lbs (we get the four pack from Costco, then it makes 2 meals with some left overs) 

Preheat oven to 400°. Line a baking sheet with tinfoil. Dry loins with a paper towel & place on baking sheet. Set aside.

Mix all rub spices together well. 
Sprinkle rub on top of pork and pat in , turn pork & sprinkle rest of rub. I usually pick up the pork and turn it around pressu g it into the baking sheet to make sure I pick up all the rub and that both loins are equally covered all around. 

Pop pork in over uncovered for 1/2 hour.

While pork is cooking make BBQ sauce.
Toss all ingredients together in a bowl and mix well. 

Pull out pork and baste each loin with about 3-4 Tbls of sauce.
Place back in the oven with a meat thermometer and cook until done. Prob about 10-15 more min. 

Pull out of oven and let rest about 5 min. Then slice and serve! You could spoon on a tiny bit of leftover BBQ sauce... or a lot more if your me! lol Just make sure you count your purples!'! ;) 

Sauce can be stored in an airtight container in the fridge. 

*Fix Portions -1/2 purple 2 Tbls BBQ sauce. 1 red of pork.
