Shepherds Pie Skillet

I had some company from out of town coming over and I was looking for a recipe in a rush one day  (surprise!  I was in a rush, haha). 

I wanted to make something that would be delicious but would only fit in one pan so I wouldn't spend my evening doing dishes instead of focussing on my company.

So there I was googling away and I discovered a recipe it sounded fabulous to me, but just needed a few tweaks make it clean Treen approved!!

Makes 8-10 servings

2 lb. lean ground turkey
4 medium carrots, diced
4 celery ribs, diced
1.5 medium onion, diced
2 large or 4 small cloves of minced garlic
4 cups frozen sweet peas
8 cups beef broth
8 tbsp cornstarch
1/3 cup tomato paste
2 large sprigs fresh rosemary
4-6 large sprigs of fresh thyme
8 cups of mashed sweet potatoes
2 Tbls organic grass fed butter
2 Tbls organic grass fed cream
1 clove minced garlic
1/2 cup shredded Parmesan cheese
salt and pepper


Instructions

1. Peel and chop your sweet potatoes and put them in boiling water . When the sweet potatoes are cooked through drain the water. Then add the minced garlic, cream, and butter. Mash it all together until smooth (I like to use my handheld mixer for this). Add Himalayan salt and pepper to taste.  then set aside.

2. In a large, oven proof skillet sauté the turkey on medium-high heat for 5 minutes, breaking it into pieces. Add the onions, carrots and celery and keep cooking for 10 more minutes.

3. Add salt, pepper, tomato paste , and 6 cups of beef broth. Stir, reduce heat to medium and cook for 20 minutes.

4. Add the peas, stir. Meanwhile, in a small dish, whisk the cornstarch with the remaining 2 cup of beef broth. Add it to the turkey, stir and cook for about 3 minutes, until the sauce starts to thicken.

5. Place the sprigs of rosemary and thyme on top of the meat and gently push them in. Just so they are barely covered by the meat . Then Arrange scoops of mashed potatoes on top. Dust the top of the potatoes with the Parmesan cheese.

6. Bake at 400F for 25-30 minutes.

This is a recipe I doubled because I was feeding more people. And even if I wasn't feeling more people, I would double it anyway so that I could have leftovers for my freezer, and that would be prepped meals for later on!
