Clean Zucchini Spaghetti

Oh my gosh what an experiment gone well! This was rediculous! I LOVE the taste of FRESH food, and THIS was fresh flavor poppin' all over! Plus, OH SO SIMPLE!

INGREDIENTS: Serves 2-3 people

2 diced tomatoes ( I use on the vine tomatoes)
2 cups cherry tomatoes chopped in 1/2
1 tbls extra virgin olive oil
2 medium cloves garlic
sea salt to taste ( I use epicures garlic chilli sea salt)
4 tbls washed and chopped fresh basil
Fresh parmesean to top noodles with (maybe 1 tbls per person)

METHOD:

 Peel 2 medium sized zucchini's. Once the skin is removed, keep using peeler to create long peices of zucchini (like big ribbon noodles), by peeling and turnining zucchini until you hit the seeds. OR use a spiralizer if you have one! Then set aside. Fill large pot with water and bring to a boil.

While you're waiting for the water to boil, chop tomatoes, dice garlic, and chop basil. Heat a skillet over medium heat with the olive oil, then once pan is hot, put the tomatoes and garlic in. Cook down until its all mushy! Turn to low, 

Then throw the zucchini noodles into the boiling watyer & cook for about 2 min, check to make sur they're cooked but not mushy ( You may need to add or take away a minute depending on how thick your noodles are). Once noodles are cooked, pour into a collander to make sure they don't over cook. Add 3/4 of the fresh basil into the tomatoes, mix in, then serve!

You can either mix the zucchini noodles into the tomato sauce then plate and top with some of the remaining basil and a bit of parm, OR you can plate the zucchini noodles, then pour some of the sauce on top and then top with some of the remaining basil and a bit of parm.

Sometimes we make this and also add turkey meat, or prawns. I cook the turkey meat at the same time as the sauce (If I don't already have prepped meat in my fridge which 9x out of 10 I do!). I usually keep the flavoring of the Turkey meat mild (like a bit of thyme and some garlic chilli sea salt)  so it doesn't overpower the fresh natural flaovors of the veggies. When I add turkey meat, I cook the ground turkey by itself. Then when I am plating it, I do a layer of noodles, then the meat, then the tomato sauce etc. If I do prawns, I just boil them for a minute in salted water, then top the dish with them right away as sea food can get over cooked easily & I DO NOT like overcooked seafood ( I grew up on an island!).
