Prawns Squash Tomato..
Spaghetti squash with its stringy texture is the perfect healthy substitute for any pasta dish. And when you combine prawns & wine, well how can you possibly go wrong. Its been such a hit since I first created it that I think we have made it 3 times in the past three weeks.
Serves 2 (doubles well!)
Ingredients:
- Spaghetti squash - 1 small squash per person
- 2 tsp of olive oil
- 1/2 cup freshly grated Parmesan
- 1/4 cup white wine (I usually use a Riesling/Gewurztraminer).
- 16 prawns/large shrimp
- 2 tbls fresh chopped basil leaves
- 4 large field tomatoes
- 4 medium cloves of garlic, minced (3 for the sauce, 1 for the prawns)
- Himilayan sea salt to taste
- Fresh cracked pepper (optional)
Preheat oven to 425°
Cut spaghetti squash in half lengthwise and scoop out seeds. Spritz it with a little olive oil, and a pinch of Himalayan Sea salt.
Place squash in oven face up on a baking pan. In my oven it takes about 45 min.
While squash is cooking, dice tomatoes, mince garlic, and chop basil and set aside.
Heat a teaspoon of olive oil in a skillet. Add minced garlic. Cook for about 30 seconds. Not let the garlic burn or it will become bitter. Toss in diced tomatoes and cook until tomatoes are soft and mushy.
Well tomatoes are cooking make sure that your shrimp is cleaned (deveined and tails removed).
Heat remaining tsp of olive oil in another skillet. Add in remaining garlic. Cook 30 seconds then toss in shrimp. Make sure not to crowd the shrimp and allow it to cook evenly on both sides (probably about 45 seconds to a minute per side), when shrimp is about 1/2 cooked through, toss in 1/4 cup of white wine.
When shrimp is almost completely cooked through toss entire shrimp mixture pan into tomato mixture pan. Then toss in 1/4 cup of the Parm and mix in.
Remove from heat so that shrimp does not overcook.
Scoop out spaghetti squash and serve on plates. Top with tomato/wine sauce/shrimp mixture. Then add a tbls of fresh chopped basil and split remaining fresh grated Parm to the top of each dish. Serve immediately! Enjoy!
