Thai Cauli.Rice & Prawns

Need we say any more than the title already does? This was our first shot at cauliflower  rice and it didn't disappoint. 

Serves 4:

1/2 cup organic unsweetened coconut
2 tbls organic avocado oil
2 small fresh red chillies
4 med garlic cloves
2 farm fresh eggs
1.5 tbls organic coconut sugar
4 cups green beans
4 cups chopped bok choy
2 EX LARGE heads cauliflower
1 cup raw cashews
1/4 cup organic gluten free tamari (organic soy sauce)
3 tbls organic rice vinegar
Lime wedges to serve
About 32 prawns cleaned & tails removed

First, lightly toast coconut and cashews in a pan on low-med heat. Watch it closely so it doesn't burn. Then set aside. 

Then wash cauliflower and prep the rice. Cut washed Cauliflower into florets and use a blender or nutribullet to pulse florets into rice size grains. Try not to pulverize it into mush! Then set aside. 

Roughly Chop beans & bok choy into bite size pieces. Steam beans until almost cooked through & set aside. 

Heat your oil in a wok or large heavy frying pan. Add the garlic and chillies and cook over medium to high heat until golden but do not let it burn or it will taste bitter.

Add the toasted coconut and cashews to the wok or pan and stir for a moment. Be careful not to burn your coconut! 

Then stir in the rice vinegar, tamari, & coconut sugar. 

Push your stirfry to one side, and crack your egg into the empty side of your pan or wok. When your egg is just about cooked through, stir it into the stirfry mixture.

Then add your cauliflower rice & stir altogether. Keep it cooking on med-high heat to help remove the moisture from the cauliflower. 

While cauliflower is cooking, Bring a pot of water to boil. 

When cauliflower is almost cooked through , toss in beans and bok choy. Stir over the heat until the bok choy has wilted. Then toss prawns in pot of boiling water for about one minute. Remove prawns from boiling water. 

Serve rice immediately with the prawns on top & lime wedges on the side, for squeezing over the rice! Believe me, it's not the same without the limes! 😉
