Steel Cut Oat Pancakes
I have been meaning to post this on here forever! I always end up posting it on Facebook & Snapchat, but then I forgot to put it in here!!
This is one of my favorite go to recipes. It is so easy and so versatile!
For a 4 person serving:
- 5 eggs + 1 and 1/4 cup of egg whites
- 2 cups of steel cut rolled oats flour. (I use my nutri-bullet to grind the oats into a flour)
- 2 large banana's
- 1 tbls vanilla
- 1 tsp cinnamon
- 1 tsp baking powder
- 2 tsp coconut oil (to cook pancakes)
- 1 to 2 cups of fruit (I change it all the time, sometimes strawberries, peaches,
apples, blueberries, raspberries etc)
I sometimes use fresh, I sometimes use frozen, and preferably whatever is in season for freshness!
*Fix Portions*
1 serving = 1 red, 1 yellow, 1 or 2 purples (depending on how much fruit you use), and 1/2 tsp for coconut oil for cooking cakes in.
