Beef, Goat Cheese Burgs

Other than the goat cheese this is totally Paleo (as long as you sub out the ezekiel bread crumbs for 2 tbls of almond flour, which I sometimes do)! 

I grew the most beautiful, juicy, and sweet beefsteak tomatoes in my garden this year. So I love adding them to everything right now. I was looking at them today and inspired me to make burgers. 

I often make turkey burgers, but today my ground turkey was frozen solid and I had some grass fed beef that wasn't, so beef it was! 

I had a giant sweet potato  that I brought home from a local farm when I was visiting my mom this past weekend. 

So I sliced it into about 1/2 inch thick rounds. I sprayed a baking sheet lined with tinfoil with a little bit of olive oil. Then I laid out my sweet potatoe slices. Then I sprayed the tops of them with a little olive oil, as well. I sprinkled them with some smoked paprika, pumpkin pie spice, and a little sea salt. I roasted them in the oven at 400° for about one hour. About 45 minutes in, I flipped them once. Remove them from the oven, and set them aside.

SWEET POTATO BUN INGREDIENTS 

- 1 Large sweet potato. Sorry I did not measure but a healthy sprinkle of smoked paprika, pumpkin pie spice, & sea salt.
- 2 tsp olive oil to coat the bottom of the pan, & the top of the 'buns'

BURGER INGREDIENTS 

- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp fennel seeds
- 1 tsp sea salt
- 2 eggs (preferably Farm fresh)
- 1 piece of Ezekiel bread dried out and crunched down into breadcrumbs (or 2 tbls almond flour if paleo).
- 1.2 lbs grassfed ground beef


Then I made breadcrumbs from one slice of Ezekiel bread ( I dried it out in the oven). I the mixed 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp sea salt, & 1 tsp of fennel seeds in my mortar and pestle and ground it all well. Then I dumped the ground spice mixture into the breadcrumbs. Then I cracked 2 eggs into the spices & breadcrumbs &mixed it all together well. Then I added the grassfed beef into the mixture & mixed it all well with my hands. Then I divided it into 4 and made 4 close to equal size patties. 

I was drooling and so excited to make my burgers, so I went to turn on the barbecue, and discovered we were out of propane. BUMMER! So I had to improvise! 

I turned on my oven to broil and threw those suckers on a broiler pan. I broiled them on each side until they were cooked through probably about 10 to 15 minutes. 

When the burgers were done, I placed one Patty on top of a sweet potato bun half. I topped it with some beet greens, and a giant thick slice of fresh tomato. Added some fresh ground pepper to the top of the tomato and placed my other sweet potato bun half on top. Served it with some raw veggies and BOOM! 

Voila!!! DE-LISH! 

Fix Portions:

2 yellows (Depending on the size of your 'buns')
1 red (Depending on the size of your burger)
1 blue
1 green
2 tsp (for the olive oil)
