Sweet Potato Brownies
Are you looking for an easy to make healthy treat for Mother's Day? Heck, why not make a treat with your mother?
So we experimented and tried making a clean eating brownie.
I must admit I was not expecting them to turn out that great, but they turned out delicious!
The trick was to let them cool fully.
The actually tasted completely different after they were totally cooled throughout.
INGREDIENTS:
- 1/3 cup + 2 tbls good quality coco powder
- 1 1/2 cup of cooked & mashed sweet potatoes
- 1.5 tsp vanilla
- 1/4 cup + 2 tbls of maple syrup
- 1 cup of cashew butter, almond butter or PB ( I tried seed butter, nope! Too strong a flavor and it overpowered it!)
- 1/4 cup of almond flour
- 2 eggs
- 2 tsp cinnamon
- 1.5 tsp baking powder
-.5 tsp coconut oil for greasing pan
METHOD:
Preheat oven to 350 degrees, grease a 9" round spring form pan.
Mix all ingredients except egg. Add the egg last. Pour into pan & grate a little bit of dark chocolate on the top. We grated 2 squares of 70% Lindt bar on the top. Bake for 25 min, let cool for 30 min.
