Spicy Peanut Salad
Last night I realized that I had forgotten to cook the ground turkey that was in my fridge. I went in the fridge to grab it and saw the fresh mini Napa cabbages that I had purchased from a farm down the road earlier that day. They made me think Asian flavors.
It was 10:30 pm so I was thinking FAST * EASY meal prep!
I tossed a fair amount of garlic powder, and a few sprinkles of organic soy sauce on the turkey. Then I reached into my freezer and grabbed a big chunk of ginger. I Grated it right on top of the meat (a lot, cuz I love me some fresh ginger!). When there ground turkey was cooked, I let it cool before putting it in the fridge.
This morning when I was ready to make my lunch, I washed and chopped my Napa cabbage. Then I grated one large carrot, and chopped a healthy handful of cilantro. Mixed it altogether in a bowl. Then I tossed my pre-cooked ground turkey on top, and added about 1 1/2 tablespoons of dressing. It was INSANELY good!

Spicy Peanut Dressing - (about 2 servings)
1 teaspoon honey or coconut sugar
1/2 teaspoon sriracha or 1 tsp chili garlic sauce
1/2 teaspoon pure sesame oil
1- 1.5 tablespoon soy (prefferably organic)
1 tablespoon natural peanut butter
Juice of 1/2 a freshly squeezed lime
1 tablespoon water
TURKEY SPICE
garlic powder (sorry I didn't measure, so do it to taste!)
soy sauce (I prefer to use organic soy)
grated fresh ginger (I keep mine in the freezer, makes it easier to grate!)
Unfortunately I didn't measure the turkey spices, but I had about one and half pounds of ground turkey (I think), and probably added about a tablespoon of garlic powder, 2 tabla fresh ginger, & 2 tablespoons of soy.
