Feisty Fish Taco's
Fresh fish taco's on a summer evening..... it doesn't get any better. Give this one a shot if your looking for just that. With the chili powder and jalapenos it has a nice little bite to it. Of course you can always adjust the heat with a little more or less of those two ingredients.
(Serves 4)
TO PREPARE FISH:
2lbs fresh cod
1/4 tsp garlic
1 tsp smoked paprika
1 tsp chili powder
1/4 tsp cumin
Pinch of Himalayan sea salt/black pepper
TO PREPARE SALSA
1/3 cup diced red onion
3 tbls chopped cilantro
2 Artulo mangos ,cut into 1cm cubes
2 jalapenos, diced
TO PREPARE TOPPINGS
1 avocado cut into slices
1 can of coconut milk, left overnight in the fridge to separate.
1/8 tsp cumin
TO PREPARE VEHICLE FOR FISH
I like to use Romain as my base because of its nutritional value. But you could use butter lettuce, or iceberg.
If you prefer, you could use a small whole wheat or organic corn tortilla.
Method:
Preheat oven to broil.
Lay fresh cod on a tinfoil lined baking sheet. Mix all spices together and sprinkle over fish.
Pop fish in the oven for about 20 min. (depending on the thickness of the fish this could vary by a couple minutes here or there).
While fish is cooking. Prep salsa ingredients and mix together in a bowl. Set aside.
Then open can of coconut milk and scoop of the thick cream at the top. Place in a glass mixing bowl and sprinkle with the 1/8 teaspoon of cumin. Use an electric mixer and whip coconut cream.
If you are using lettuce as the base for your taco then wash and dry lettuce leaves. Otherwise, just lay your choice of tortilla on a plate.
Place your fish on the base first, add a scoop of salsa, then top with avocado and a scoop of coconut/cumin whip!
Or if your husband shakes the can of coconut milk you were trying to separate, try to scoop out as much of that creamy goodness as possible and whip it into a sort of foam with cumin instead. Drizzle on top.
Serve immediately and enjoy.

1 red. 1 purple. 1 blue. 1 Green (if you use lettuce), or 1 yellow (for a tortilla).
