Bruschetta Chicken

Chicken breasts rarely get cooked in this house. But when we do decide to grill up some for dinner, this is how we do it 9 out of 10 times. If your a fan of goat cheese and like a nice fresh tasting dinner. Look no further.

BRUSCHETTA CHICKEN - Serves 4

4 4oz chicken breasts

8 oz Goat cheese (2oz per breast)
1 large clove garlic minced

2 cups cherry tomatoes, cut into quarters
4 tbls of fresh chopped basil
2 tsp organic olive oil
2 tsp red wine vinegar

Himilayan Pink Salt & Black pepper to taste

 

Method:
Preheat barbeque. While barbeque is heating up, Mince garlic, and mash into goat cheese then set aside. 
Next, Wash and chop tomatoes and basil. Then mix tomato and basil with the olive oil, red wine vinegar, and a pinch of salt and pepper. Set aside. 
Season chicken breasts lightly on both sides with a little salt and pepper, then place on the grill. Cook chicken until done, usually about 25-30 min at around 400° depending on thickness of breasts.
When chicken is just about done, top with goat cheese and allow to soften and warm a little on top of chicken. 
Serve goat cheese topped chicken breasts immediately when done, and top each chicken breast with one quarter of the bruschetta.
