Coconut N' Prawns
Jeff and I have been addicted to curry for as long as we can remember. Anything that has coconut milk and spices in it makes us happy!
People are always requesting that we share healthy curry dishes with them if there is such a thing. I'm here to tell you that YES, you CAN still enjoy curry inspired dishes and be healthy!
So tonight we took coconut milk and combined it with quinoa and some Indonesian inspired spices to create this luscious little number!
INGREDIENTS (Serves 2)
-1 tsp avocado oil
-1 tsp salt
-½ tsp fresh ground pepper
-½ large sweet onion, quartered and cut into thin slices
-1 tsp coriander
-1 tsp cumin
-2 garlic cloves (minced)
-14 ounces zucchini, cut into ¼ inch dice
-1 tbls fresh squeezed lemon juice
- ¼ cup chopped cilantro
- ½ cup quinoa
- ½ cup coconut milk
-½ cup water
- 16 prawns
METHOD:
In a larger skillet, heat the oil and toss in the onions. Cook stirring occasionally until soft, about 5 min. Then toss in the garlic and cook about another minute. Add the spices and then stir in the quinoa and zucchini, cook for a minute. Then toss in the coconut milk and water, cover and simmer on low heat until quinoa is done (about 15-18 min). Then add the prawns and stir here and there until cooked through (prob about 1-2 min). Stir in the lemon juice and then serve immediately topped with the cilantro!
